Cauliflower Pizza Crust (dairy-free)
Okay, Okay, don’t judge me! Just because cauliflower is one of the earth’s healthiest edible offerings, doesn’t mean it has to taste horrible! Oh come on, give it a go!

  1. Place pizza stone or pan in your regular oven and start to pre-heat to 450˚F
  2. On counter or cutting board place a large sheet of parchment paper and spray or brush oil on top surface of paper
  3. Thoroughly wash and dry a head of cauliflower and cut off the florets (don’t bother with the stem) and pulse in food processor until fluffy and white.
  4. Place about 3 cups of processed cauliflower into microwave-safe covered bowl and microwave for 4 minutes.
  5. Dump cooked cauliflower onto clean tea towel and wait for it to cool. Then when it is cool(ish), wrap up the cauliflower in the tea towel and squeeze out as much water as possible. The more you squeeze, the less crumbly and more “crust-like” the final product will be.
  6. Put cauliflower into another bowl and add all of your other ingredients now (save the egg until you’ve mixed things up just a bit with your hands). Once the egg is added and you’ve thoroughly mixed everything together, take the dough shape it onto your parchment paper. flatten and shape it like you think a pizza crust should look like (not too thick or thin).
  7. With the cutting board (preferrably) slide the crust (with the parchment) onto your pizza stone or pan, and bake for about 10-12 minutes until edges look browned.
  8. Remove your crust and add toppings. We would suggest already cooked toppings like sauteed vegetables and shredded meats. If you do, then place the pizza back in the oven for another 5 minutes or so. You may have to go a bit longer with fresh veggies or certain meats, but just watch it carefully so the crust doesn’t get too dark or black. Then, EAT IT! (if you have patience, you may want to let it sit for 2-4 minutes to cool down).
