The idea in this recipe is to keep the saturated fat content low-ish by using low-fat meats. We're also trying to minimize the amount of carbohydrate in each slice by using a thin crust. We're not too focused on the content of the crust itself, just that it's very thin, so there's no room for lots of carbs!

Ingredients
- 1/4 cup diced green pepper
- 1/4 cup diced onion
- 1/2 cup sliced mushrooms
- 1 teaspoon olive oil
- 1/2 cup pizza sauce
- 2 ounces lean ham or meat of choice cut into half inch chunks
- 8 ounce thin, crispy pizza crust use flatbread if necessary (thinner is better)
- 1 cup shredded skim (or regular) mozzarella cheese

Instructions
- Preheat oven to 425°F. Spray a large skillet with nonstick cooking spray. Add onion, green pepper, and mushrooms and sauté over medium heat until soft, about two to three minutes. Remove from heat. Brush the olive oil over the top of the pizza crust. Spread the pizza sauce over the crust up to half an inch from the edge. Evenly sprinkle the sautéed vegetables, Canadian bacon, and mozzarella over the crust. Place pizza crust on oven rack or cookie sheet in the middle position of the oven. Bake for 7–10 minutes. Remove from the oven and let sit for 3–5 minutes at room temperature, then cut into eight slices.
