Okay, this is really a pizza cheat (technically), since it's really just eggplant topped with good stuff, but we think it'll kill the cravings to a great extent, and boost your health factor to “way up there”.
By the way, when it comes to toppings, you can use nearly whatever you like since the main health feature here is the "crust"!!

Instructions
- Set oven to pre-heat to 400˚F
- Slice eggplant into appropriate size (and thickness) slices
- Add salt to the slices and let them sit for about a half hour. After that, you can pat them to make them drier
- Your oven should be ready by now (or you can start pre-heating later if you know it can hit 400˚ before 30 minutes. Top your slices however you'd like (no rules here!)
- Bake for about 20 minutes (ish). The actual time will vary widely depending on how thick and big the slices are.
