The fuel in a homemade pizza costs between 1.7 cents and 10.6 cents. We derived that from manufacturer-published burner ratings and wattages, US Energy Information Administration energy prices, and arithmetic we show in full so you can check it. Includes cost per hour, cost per million BTU, and a break-even table for whether a cheaper-to-run oven ever repays a higher sticker price. Spoiler: almost never.

Running a pizza oven costs between 1.7 cents and 10.6 cents of fuel per pizza, depending on the oven and what it burns. The cheapest is a 1,600 W electric oven at about 1.7 cents a pizza. The most expensive mainstream option is a 29,000 BTU per hour propane oven at about 10.6 cents a pizza. Both figures are ceilings, computed from manufacturer-published ratings and current US energy prices, with the arithmetic shown in full below.
The counterintuitive part comes when you look at the fuels rather than the ovens. Per unit of delivered energy, electricity is by far the most expensive thing you can buy: $54.04 per million BTU against $29.24 for propane and $15.42 for natural gas. And yet the electric oven is the cheapest to run, because a 1,600 W electric oven consumes about 5,459 BTU per hour while a full-size gas oven consumes 29,000. An insulated box with a lid beats cheap fuel roaring out of a flue, and it is not close.
The bigger finding is that none of this should change what you buy. Over ten years of two pizza nights a month, the most fuel-hungry oven in this study burns about $203 of propane, which is less than half its own purchase price. The most efficient burns about $33. Running cost is a rounding error against the sticker. The break-even table below shows exactly how bad the arithmetic is for anyone paying extra up front to save on fuel.
Nobody publishes this math, so we did it from primary sources: burner ratings out of Ooni's and Gozney's own certification manuals, wattages off manufacturer spec pages, and energy prices from the US Energy Information Administration with the exact month each figure covers. Where we could not verify something, we say so and publish nothing rather than a plausible guess. That list is at the bottom, and it is longer than you would expect.
The short version
- Fuel cost per pizza runs from about 1.7 cents (Ooni Volt 2, electric) to about 10.6 cents (Ooni Koda 16, propane). Every figure here is an upper bound.
- Electricity is the most expensive fuel per BTU ($54.04 per million BTU) and the cheapest way to run a pizza oven, because electric ovens use roughly a fifth of the energy of a full-size gas oven.
- Natural gas is the cheapest heat by a wide margin at $15.42 per million BTU, about 53% the cost of propane. A 29,000 BTU per hour oven costs $0.45 an hour on natural gas versus $0.85 on propane.
- Buying propane by tank exchange costs roughly twice as much per gallon as refilling, and the exchange cylinder holds 15 lb rather than 20. AmeriGas states the 15 lb figure on its own website.
- Wood pellets are the most expensive fuel in the category by a distance: a branded 20 lb bag of cooking pellets works out to $144 to $156 per million BTU, five to ten times electricity or natural gas.
- Ooni publishes two figures for Fyra pellet consumption that differ by roughly an order of magnitude. We publish both and the resulting range (26 cents to $3.13 per pizza) rather than pick one.
- Break-even is brutal. Paying $200.95 more for an electric oven to save 8.9 cents a pizza takes 2,263 pizzas, which at two pizza nights a month is 23.6 years.
- The Ooni Koda 12 is widely cited at 13,300 BTU per hour. Ooni's own certification manual says 13,500 BTU per hour. We use the manual.

The table: cost per pizza and cost per hour
Fuel cost only. Cost per hour is the oven at full rated output. Cost per pizza uses the session model in the methodology (8 pizzas per session), so it scales directly if you cook more or fewer. Propane is priced at the EIA residential average of $2.674 per gallon; electricity at the EIA national average of 18.44 cents per kWh.

Every rating in that table came out of the manufacturer's own manual or spec page, not from a retailer listing and not from memory. Sources are in the inputs table further down. Pellet and hardwood ovens are absent from this table on purpose: the manufacturers do not publish consumption figures precise enough to compute a defensible number, and we explain that in full below rather than fill the cells with guesses.
The headline spread is 6.2x, from 1.7 cents to 10.6 cents a pizza. In absolute terms it is nine cents. Nine cents per pizza is the entire difference between the most and least efficient mainstream pizza oven you can buy, and that number is doing a lot of work in the break-even section below.
The counterintuitive part: the most expensive fuel is the cheapest to run
Strip the ovens out and price the fuels on the only basis that lets you compare them, dollars per million BTU of delivered energy. The ranking flips completely.

Electricity costs 3.5 times as much per BTU as natural gas and 1.85 times as much as propane, and the electric oven still wins on cost per pizza. The reason is in the ratings, not the rates: an Ooni Volt 2 at 1,600 W consumes about 5,459 BTU per hour, while an Ooni Koda 16 consumes 29,000 BTU per hour. That is 5.3 times less energy. Buying the most expensive fuel and using a fifth as much of it wins comfortably.
The other thing that table shows is how bad pellets are. A branded 20 lb bag of cooking pellets is $144 to $156 per million BTU, roughly ten times natural gas and five times bulk heating pellets of the same nominal energy content. You are paying for food-grade species selection, packaging, and a logo. Bulk heating pellets are far cheaper per BTU but are not sold as cooking fuel, and species and binder differ, so we are not recommending you burn them under a pizza. We are pointing out that the price gap between the two is about 6x and is not explained by energy content.

Should running cost change what you buy? A decision framework
Four rules, in order of how much money they move.
1. Ignore running cost when choosing between ovens. The entire spread across the mainstream field is nine cents a pizza. Over ten years of two pizza nights a month, 1,920 pizzas, the most fuel-hungry oven here burns $203.52 of propane and the most efficient burns $33.02. The difference across a decade is $170, which is less than the price gap between most of the ovens in our best pizza ovens ranking. Choose on heat, size, and where it will live. 2. If you already have a natural gas line, that is the one exception worth acting on. The Ooni Koda 16 natural gas variant costs a dollar more than the propane version and runs at $0.45 an hour instead of $0.85. The fuel saving repays the dollar in about 20 pizzas. The catch is that this only works if the line and the quick-connect already exist. If a plumber has to run one, the annual fuel saving at 24 sessions a year is about $9.62, so a $500 installation takes roughly 52 years to repay on fuel alone. Install a gas line because you are tired of tanks, not because of the math.
3. Refill your propane cylinder, do not exchange it. This is worth more than the oven choice. Details in the section below, but the short version: exchange costs roughly double per gallon and gives you 15 lb instead of 20.
4. If you are choosing electric, do it for the plug, not the running cost. Electric ovens are cheaper to run, but the saving is under two cents a pizza against a small gas oven. The real arguments for electric are that it works indoors, on a balcony, and in a flat, and that it preheats in about half the time. The arithmetic, shown in full
Every figure on this page comes from one of four formulas. They are written out so you can substitute your own utility rate and re-derive everything.
Gas cost per hour = burner rating (BTU/hr) ÷ fuel energy content (BTU per unit) × fuel price per unit.
Worked, for the Ooni Koda 16 on propane: 29,000 ÷ 91,452 = 0.3171 gallons per hour. 0.3171 × $2.674 = $0.85 per hour. Over a one hour, 8 pizza session that is $0.85 ÷ 8 = $0.106 per pizza.
Worked, for the same oven on natural gas: 29,000 ÷ 1,036,000 BTU per thousand cubic feet = 0.0280 thousand cubic feet per hour. 0.0280 × $15.97 = $0.45 per hour, or $0.056 per pizza.
Electric cost per hour = watts ÷ 1,000 × price per kWh.
Worked, for the Ooni Volt 2: 1,600 ÷ 1,000 = 1.6 kW. 1.6 × $0.1844 = $0.295 per hour. The Volt 2 session is 12 minutes of preheat plus 8 pizzas at 2 minutes, 28 minutes or 0.467 hours: 0.467 × $0.295 = $0.138 for the session, $0.0172 per pizza.
Cost per million BTU = fuel price per unit ÷ (energy content per unit ÷ 1,000,000).
Worked, for electricity: $0.1844 ÷ (3,412 ÷ 1,000,000) = $54.04 per million BTU. For natural gas: $15.97 ÷ 1.036 = $15.42. For propane: $2.674 ÷ 0.091452 = $29.24.
Break-even in pizzas = purchase price difference ÷ fuel cost difference per pizza.
Worked, for an Ooni Volt 2 at $698.95 against an Ooni Koda 16 at $498.00: the price gap is $200.95 and the fuel saving is $0.106 − $0.0172 = $0.0888 per pizza. $200.95 ÷ $0.0888 = 2,263 pizzas.
Substitute your own numbers freely. If your electricity is 30 cents a kWh rather than 18.44, the Volt 2 costs $0.48 an hour and 2.8 cents a pizza, and it still runs cheaper than a Koda 16 on propane.
Break-even: does a cheaper-to-run oven ever repay a higher price?
This is the table that settles the argument. Purchase prices were verified live through the Amazon Product Advertising API on August 8, 2026. Fuel cost differences come from the table at the top. The break-even column is simply the price gap divided by the per-pizza saving.

Read the first row carefully, because it is the whole argument. Paying $200.95 extra for the more efficient oven takes 2,263 pizzas to repay. At two pizza nights a month, eight pizzas each, that is 283 pizza nights, or 23.6 years. At a genuinely committed one pizza night a week it is still 5.4 years. Nobody should buy an oven on that basis, and anyone telling you an expensive oven "pays for itself in fuel" is not doing arithmetic.
The bottom two rows make the opposite and more useful point: in the pairs where the cheaper-to-run oven is also the cheaper oven, break-even is immediate and running cost is a free bonus rather than an investment case. The Gozney Arc Lite is $600 less than the Arc XL and burns less gas doing it. What the XL buys is capacity and a bigger door, not efficiency. That trade is covered properly in Arc vs Arc XL.
The only row where the math genuinely argues for spending more is the natural gas variant at a dollar premium, and even there the honest framing is that a dollar is not a decision. What matters is whether you already have the line.
Propane: refill, never exchange
This is the single largest running-cost lever available to a propane oven owner, and it has nothing to do with which oven you bought.
A tank exchange cylinder does not contain 20 lb of propane. AmeriGas states on its own website that its exchange grill tanks contain a net weight of 15 lb. U-Haul states on its own website that many exchange programs fill 20 lb tanks to about 15 lb, and that a refill therefore gives up to 33% more propane. This is not a conspiracy theory: the Federal Trade Commission brought a case in 2014 over Blue Rhino and AmeriGas each cutting exchange fill from 17 lb to 15 lb in 2008 without cutting the price, which both companies settled in October 2014.
The price runs the same direction. U-Haul publishes both figures on its own site: refills at approximately $3.00 to $4.00 per gallon, exchange at typically $5.00 to $6.00 per gallon. A Blue Rhino 20 lb exchange was $23.99 at Ace Hardware when we checked on August 8, 2026, and neither Blue Rhino's own site nor the retailer's product page discloses the fill weight anywhere.
Put together: you pay roughly double per gallon and receive three quarters as much gas. In cost-per-million-BTU terms that is $54.67 to $65.61 for exchange against $32.80 to $43.74 for a refill, and $29.24 at the EIA residential average.
What that means in run time, using the widely used industry convention that a 20 lb cylinder holds about 4.6 gallons when filled to the standard 80%:

One honesty note on that table: the 4.6 gallon figure is an industry convention, published by propane suppliers rather than by any government source, and we could not verify it from a primary source. The gallons-per-hour column does not depend on it and is solid; the hours columns inherit its uncertainty. Treat them as close, not exact. Pellets and hardwood: where we stop computing
Live-fire ovens are where the published data runs out, and we would rather say so than fill in the gaps.
The pellet problem is that Ooni publishes two figures that cannot both be true. On the product page for its Premium Hardwood Pellets, Ooni says one 20 lb bag lasts "a good 8-12 hours of continuous cooking," which is 1.67 to 2.5 lb an hour. In its help centre, Ooni says a Fyra 12 uses approximately 25 lb of hardwood pellets per 10 pizzas, which is 2.5 lb per pizza. At the 60 to 90 seconds a Fyra is designed for, those two claims differ by roughly an order of magnitude. We could not load the help centre article directly (Ooni's support site now renders as a JavaScript application), so we flag that as a second-tier source, but both numbers are Ooni's.
Rather than choose, here is the range. At Ooni's own $25.00 per 20 lb bag, which is $1.25 a pound:

Even the generous end of that range makes pellets the most expensive fuel in the category by a factor of three against propane, and the pessimistic end makes them thirty times more expensive. What we can say confidently is the direction: pellets cost far more per pizza than gas or electricity, and the branded cooking bags are the reason.
The hardwood problem is simpler: nobody publishes a weight. We can price the boxes. Ooni sells a Karu 12 fuel bundle at $90.00 and says only that "each box will last enough to cook dozens of pizzas." Cutting Edge Firewood sells kiln-dried pizza wood from $49.00 for a standard box to $399.00 for a rack, and its product page publishes no usable weight. Without a weight, there is no path from a box price to a cost per BTU, so we do not publish one.
What we can source is the energy side. The University of Maryland Extension's Heating with Wood publication puts bone-dry wood at about 8,600 BTU per pound and air-dried wood at 20% moisture at about 7,000 BTU per pound, with roughly 1,200 BTU consumed vaporising each pound of water. Kiln-dried cooking wood sits between those. That is the physics; the economics are unpublished. One rating-plate subtlety worth flagging for anyone re-deriving these: Gozney's European manuals give the Arc as 4.5 kW and the Arc XL as 5.5 kW, which convert to roughly 15,355 and 18,767 BTU per hour, higher than the US plate figures of 14,400 and 17,500. The difference is regulator pressure, not a typo. For a US audience the US and Canada manual is the correct source, and that is what we used.
What we would not publish, and why
Every running-cost article on the internet has numbers for things nobody actually measures. Here is what we tried to verify and could not, so you know exactly where the edges of this page are.
Propane liquid density in pounds per gallon. The conventional figure of 4.24 lb per gallon appears only on commercial and calculator sites; neither EIA nor the DOE Alternative Fuels Data Center publishes it on the pages we checked. It is also internally inconsistent with the other widely repeated figure: 20 lb divided by 4.24 lb per gallon is 4.72 gallons, not the 4.6 gallons everyone quotes. We therefore ran all propane math in gallons and BTU, and used pounds only where a source stated pounds directly.
Cost per BTU for kiln-dried cooking wood. No retailer we checked publishes a usable weight for a box of pizza wood. Without a weight there is no defensible path from a box price to a cost per pizza, so there is no number.
Solo Stove Pi Prime burner rating. The figure of 15,000 BTU is widely repeated, but Solo Stove's site blocked every attempt to read it and the retailer-hosted manual PDF contained no technical content. Because we could not confirm it from the manufacturer, the Pi Prime is absent from the tables above rather than present with an unverified rating. Wood consumption for the Ooni Karu ovens. Ooni publishes no pounds-per-hour figure for any Karu, only qualitative guidance about keeping five or six pieces of kindling burning. This is a confirmed absence rather than a failed search.
Preheat time for the Gozney Arc, Arc XL, and both Ninja ovens. None is published. Ninja's own spec page states its three-minute bake time is "excluding preheat" without ever giving a preheat figure. Gozney says "within minutes."
A resolved Ooni Koda 16 preheat time. Ooni's product page says 950°F in 20 minutes; Ooni's own explore page for the same oven says 500°C in 15 minutes. Both are Ooni. We used neither in the cost math (our session model states its own preheat assumption) and we are not going to pick between them. Thermal efficiency for any oven. No manufacturer publishes one. This is the single biggest gap in the page, and it is the reason we compare fuel input rather than heat delivered. It works against gas, so the electric advantage shown above is if anything understated.

How we chose
What this page is: computed original data. We take each oven's manufacturer-published nominal rating (BTU per hour for gas, watts for electric), multiply by a sourced fuel price, and divide by the fuel's published energy content. Every input is listed with its source and date, and every formula is written out, so any figure here can be independently re-derived or updated with a different fuel price.
Energy conversion factors, all from the US Energy Information Administration: 1 kWh = 3,412 BTU; 1 cubic foot of natural gas = 1,036 BTU (EIA's current estimate for gas delivered to US consumers, which drifts by year; the older 1,037 figure is superseded); 1 gallon of propane = 91,452 BTU on a higher-heating-value basis. Note that real burner output is closer to propane's lower heating value of about 84,250 BTU per gallon, per the US Department of Energy Alternative Fuels Data Center, so our propane figures are slightly conservative in the buyer's favour.
The session model behind cost per pizza, stated explicitly because it is an assumption and not a measurement: a gas session is 20 minutes of preheat plus a 40 minute baking window, one hour of burner time, producing 8 pizzas. An electric session is 12 minutes of preheat (Ooni's published figure for the Volt 2) plus 8 pizzas at 2 minutes each, 28 minutes total. Change the pizza count and the per-pizza figure scales directly; the per-hour figures underneath do not depend on the model at all.
These are ceilings, on both sides. The gas figures assume the burner is at maximum for the entire session, which nobody does. The electric figures assume the element draws its rated wattage continuously, which no thermostatically controlled oven does either, since the element cycles. Both fuels are therefore overstated by a similar mechanism, which is what makes the comparison between them fair even though each absolute number is high.
Prices are residential US averages and will not match your bill. Electricity in Hawaii and California is far above the national average and in Idaho and Utah far below; propane varies by region and season. The point of publishing the formula is that you can substitute your own rate.
Natural gas seasonality warning, because it trips up almost everyone who quotes an EIA figure in summer: EIA's residential dollar-per-thousand-cubic-feet number swings enormously through the year, not because gas gets more expensive but because a fixed monthly customer charge divides into a tiny summer volume. EIA's Q3 2026 residential figure is $24.26 per thousand cubic feet against a 2026 annual average of $15.97. We use the annual average. Anyone grabbing 'the latest EIA number' in August will overstate natural gas cost by about 50%.
Efficiency is not modelled, and we want to be honest that this is the biggest limitation. We compare fuel input, not heat delivered to the pizza. A vented gas oven throws a large share of its input out of the flue; an insulated electric box does not. That is precisely why the electric ovens win despite buying the most expensive energy, but we cannot put a number on the loss because no manufacturer publishes a thermal efficiency figure for a pizza oven. If one did, the gap would widen further in electricity's favour.

It is an input figure, not an output figure: it tells you how fast the oven burns fuel, not how much of that heat reaches the pizza. An Ooni Koda 16 is 29,000 BTU/hr; a Gozney Arc Lite is 11,687.
- Cost per million BTU
- The only basis on which fuels priced in different units (gallons, kWh, cubic feet, pounds) can be compared. Natural gas is $15.42, propane $29.24, electricity $54.04, and branded cooking pellets $143.68 to $156.25. Note that the cheapest fuel per BTU does not produce the cheapest pizza, because ovens differ enormously in how much energy they consume.
- Higher and lower heating value
- Two ways of stating a fuel's energy content. Higher heating value counts the energy recovered when water vapour in the exhaust condenses; lower heating value does not, and is closer to what an open-flued appliance actually delivers. Propane is 91,452 BTU per gallon on a higher heating value basis and about 84,250 on a lower heating value basis. We use the higher figure, which makes our propane cost estimates slightly conservative.
- Tank exchange versus refill
- Exchange swaps your empty cylinder for a pre-filled one containing 15 lb of propane, per AmeriGas's own published figure, at roughly $5.00 to $6.00 per gallon. Refill fills your own cylinder to its full capacity at roughly $3.00 to $4.00 per gallon. You pay about double and receive about three quarters as much.
- Break-even in pizzas
- The purchase price gap between two ovens divided by the fuel cost difference per pizza. It answers whether a cheaper-to-run oven ever repays a higher sticker. For a $200.95 gap and an 8.9 cent saving it takes 2,263 pizzas, which is why running cost should almost never drive a buying decision.
Questions, answered
How much does it cost to run a pizza oven?
Between about 1.7 cents and 10.6 cents of fuel per pizza, or roughly $0.30 to $0.85 per hour of cooking. A 1,600 W electric oven such as the Ooni Volt 2 costs about $0.30 an hour; a 29,000 BTU per hour propane oven such as the Ooni Koda 16 costs about $0.85 an hour on propane and $0.45 an hour on natural gas. Figures use EIA residential energy prices as of mid-2026 and manufacturer-published ratings, and are upper bounds because they assume full output throughout.
Is it cheaper to run a gas or electric pizza oven?
Electric, and by a wider margin than most people expect. Electricity costs 3.5 times as much per BTU as natural gas and 1.85 times as much as propane, but an electric pizza oven consumes about a fifth of the energy a full-size gas oven does: 5,459 BTU per hour for a 1,600 W electric oven against 29,000 BTU per hour for an Ooni Koda 16. The result is about 1.7 cents a pizza electric against 10.6 cents propane. The reason is that a gas pizza oven vents most of its heat out of the flue and door while an electric one is a sealed insulated box.
How much propane does a pizza oven use per hour?
It depends entirely on the burner rating, and you can compute it exactly: divide the oven's BTU per hour by 91,452, the BTU in a gallon of propane. An Ooni Koda 16 at 29,000 BTU/hr uses 0.317 gallons an hour. A Gozney Roccbox at 14,330 BTU/hr uses 0.157. An Ooni Koda 12 at 13,500 BTU/hr uses 0.148. On a properly refilled 20 lb cylinder that is roughly 14.5 hours for the Koda 16 and 31 hours for the Koda 12, though those hour figures rest on the industry convention that a 20 lb cylinder holds about 4.6 gallons, which no government source publishes.
How long does a 20 lb propane tank last in a pizza oven?
Roughly 14.5 hours on an Ooni Koda 16, 24 hours on a Gozney Arc XL, 29 hours on a Gozney Roccbox or Gozney Arc, 31 hours on an Ooni Koda 12, and 36 hours on a Gozney Arc Lite, assuming full burner throughout and a properly refilled cylinder. Cut all of those by about 25% if you use a tank exchange rather than a refill, because AmeriGas states its exchange cylinders contain 15 lb of propane rather than 20.
Is it cheaper to refill or exchange a propane tank?
Refill, clearly and by a lot. U-Haul publishes both figures on its own site: refills at approximately $3.00 to $4.00 per gallon and exchange at typically $5.00 to $6.00 per gallon. On top of that, exchange cylinders are filled to about 15 lb rather than 20, which AmeriGas states on its own website and which the Federal Trade Commission litigated over in 2014. You pay roughly double per gallon and receive about three quarters as much gas.
Is a natural gas pizza oven cheaper to run than propane?
Yes, by about 47%. Natural gas delivers heat at $15.42 per million BTU against $29.24 for propane at EIA residential average prices, so the same 29,000 BTU per hour oven costs $0.45 an hour on natural gas and $0.85 on propane. The natural gas variant of the Ooni Koda 16 costs a dollar more than the propane version, which the fuel saving repays in about 20 pizzas. That only holds if you already have a gas line: at 24 cooking sessions a year the annual saving is about $9.62, so paying a plumber $500 to run one would take roughly 52 years to repay on fuel alone.
How much electricity does a pizza oven use?
Between 1,600 and 1,800 watts for the main countertop models: 1,600 W for the Ooni Volt 2, 1,760 W for the Ninja Artisan, 1,800 W for the Breville Smart Oven Pizzaiolo, and 1,700 W for the Ninja Woodfire outdoor oven. At the US average residential rate of 18.44 cents per kWh that is $0.30 to $0.33 an hour at full draw. Real consumption is lower because the thermostat cycles the element rather than running it continuously, so treat those as ceilings.
Are wood pellets expensive to burn in a pizza oven?
Extremely, relative to gas or electricity. A branded 20 lb bag of cooking pellets at $25.00 works out to $143.68 to $156.25 per million BTU, roughly ten times natural gas and five times bulk heating pellets of similar energy content. On Ooni's own published consumption figures the cost lands somewhere between 26 cents and $3.13 per pizza, a range that wide because Ooni publishes two claims that differ by roughly an order of magnitude. Even the optimistic end is about three times the cost of propane.
Does a cheaper-to-run pizza oven pay for itself?
Almost never at home. The entire fuel-cost spread across the mainstream field is about nine cents a pizza, so paying $200.95 extra for the more efficient oven takes 2,263 pizzas to repay: 23.6 years at two pizza nights a month, or 5.4 years at one a week. Over ten years of two pizza nights a month the most fuel-hungry oven here burns about $203 of propane, less than half its own purchase price. Choose an oven on heat, size, and where it will live, then treat the fuel bill as noise.
