That is the taste you are objecting to.

It is worth separating two things that get conflated constantly. Good wood smoke is a flavour, and it is one of the main reasons people buy a live fire oven in the first place: clean, sweet, thin and faintly blue, barely visible against the sky. The fuels the EPA says never to burn

This section is a safety rule wearing a flavour rule's clothing, and it is worth reproducing precisely. Softwood resin and bark: dry wood that still sooties

Dry is necessary, not sufficient. Dry softwood full of resin will still soot your pizza. Species and bark are separate variables from moisture, and all three have to be right.

Starving the fire: overloaded trays, closed vents, ash beds

The counterintuitive rule: when a fire is smoking, adding wood almost always makes it worse. Give it air instead, space the fuel out, open the vent to where the manual says, and clear the ash.

The cold start: a cool chamber is a smoky chamber

There is a phase at the beginning of every wood fire where the smoke is genuinely bad and nothing is wrong. The impostor: burnt semolina, not smoke
